'In October 2012, a very well-known viticulturist and winemaker was walking through his little Merlot vineyard on the upper high slopes of the Helderberg (past Cordoba farm, to the very end of the road…), when he noticed something very strange. Halfway to the top of the vineyard, at a specific point, the growth points of the vine-shoots, in the morning sunlight, showed an abrupt change in colour - from green to bronze. And there’s only one varietal that does that. And it’s NOT Merlot… Now on paper and according to the government, the previous owner had planted that whole block as Merlot and had been making wine from it for 13 years. Cabernet Franc, however, has this unique characteristic of showing bronze growth points (in the morning sun) only a few days of the year while the shoots are more or less 5 - 8 cm long. And it just happened to be on one of those mornings that the winemaker went for his morning walkabouts in his vineyard… So it turned out that the top part of the vineyard is in fact Cabernet Franc, NOT Merlot! The only explanation for this is that there must have been a mix-up when the little vines were distributed from the nursery.'

Spatburgunder Weiler Schlipf CS, Weingut Claus Schneider, Baden 2014

A wine with the dew still on it. Lovely youthful red cherry, strawberry and blackberry fruit and a subtle wisp of smoke, dried orangepeel, sandalwood, gamey, new leather (Johannes's CS range is partly matured in new barriques) notes emerging with time in the glass. I'm transported to Gevrey tasting this. On the palate, the tannins are present but fine enough for the wine to be very enjoyable now. Laying down would be wise, however. The wine is structured but subtly so, with a firm backbone of acidity - from a combination of the limestone soil and the cooler 2014 vintage - suggest ageability of ten years at least. Johannes management of the flavour profiles and the clear delineation of quality levels is remarkable.

The 2012 has had a little personality change, it's a little more grown up, more je ne sais quoi. There are still all of those lovely spicy, baking-christmas-cake oak characteristics and that bold but effortlessly smooth quality that comes from Malbec with a bit of age, but the fruit is more sophisticated from the slightly later 2012 harvest. Fig and ripe plum predominate with an undercurrent of richer blackcurrant and a grating of cocoa rich dark chocolate to finish.

Rich in body, smooth in texture, with concentrated, oak-spiced dark fruits on the nose and palate with subtle herbal and floral (violets) notes. Ripe and powerful on the palate but well-rounded and supple. The cab gives it some freshness in the mid-palate, but you can still get a sense of the other two varieties - the herbal, liquorice notes of the Touriga, the inky depth and spiciness of the Aragonez. Generous, mouth-filling with a long, long finish.

Balazu Des Vaussieres is the domaine of husband and wife team Nadia and Christian Charmasson. They are based in Tavel in the Southern Rhone. Nadia and Christian are committed to biodynamic viticulture, but take it one step further by refusing to use copper – a controversial part of organic farming, currently being discussed in the EU courts. This is extreme organics – very, very few domaines in the world, whether conventional, organic or biodynamic, are willing to take the risk of fungal damage to their crop that not using copper and sulphur usually presents. Nadia and Christian, though, primarily rely on essential oils and herbal preparations to maintain the health of their vines.

Really arresting. Some very unusual aromas. Quintessentially pinot – cherry, raspberry, cola cube –but with masses of whole-bunch spices. Eastern spices – cardamom, cumin - and a certain meatiness. Very pale in colur, almost savoury on the palate. Bracing acidity, grainy dry tannin and a hint of iron/rust. A totally fascinating interpretation of pinot noir.

After much research and tasting we’ve found this astonishingly classy Bordeaux from the hills overlooking St Emilion and Pomerol. We love its classical flavour of pencil lead, cedar and black fruits. There is something a bit like a Medoc wine that comes from the Cabernet Franc in the blend with Merlot (like Cheval Blanc) but also undeniably charming and drinkable as St Emilion should be. Savage Red Blend 2015

'. This dark horse has always been backward and restrained, broody and slightly sulky, but bearing in mind it comes from one of the best red vintages in the Cape in a generation, it can be forgiven for being initially shy and ungiving. With some coaxing, the nose slowly starts to reveal its secrets, showing notes of salty red liquorice spice, aniseed root, cassis leaf, grenadine, blood oranges and vermouth botanicals. The palate is taut and very precise, linear and crisply textured with vivacious notes of tangerine, naartjie peel, ruby grapefruit, sour red cranberry and earthy red plums, all dusted with a liberal dose of crushed black peppercorns and mineral graphite spice. Tantalisingly complex, it is almost impossible to unravel the intricacies of this classy red and identify traits of individual varieties. With the extra aging, the tannins are starting to become a little more supple and pliable, yet continue to lend great textural gravitas, power and focus to this blend. I’d say it has been worth the wait… but just don’t wait to put in your order for this impressive red blend as it signals the end of one era and the dawning of a new and exciting chapter in the history of the Savage winery. Savage Thief In The Night 2017

'The wine shows a real individuality and personality with bright fragrant violet perfume, sappy spicy peppery raspberry and redcurrant confit complexity, hints of sun raisined cranberries, cured bresaola, boiled raspberry sweets and wild strawberry. The palate weight is soft and sensual, combining the best of both Grenache and Cinsault to form an impressively harmonious, silky soft sappy red blend. The wine seems to grow exponentially in the glass, unfurling and unravelling to reveal layers of strawberry jam, raspberry compote and Turkish delight all framed with bright crystalline acids that really amplify the wines purity, minerality and sense of place. Such a pretty wine with the sleekest and most polished tannins and a mellow fruit intensity. Despite its eminent drinkability in youth, this is no frivolous ‘vin de soif’ and could just maybe, over time, acquire a similar cult following to that of Duncan’s excellent Cinsault-dominated Follow The Line red blend from Darling. 'Possessing a youthful red plum translucent colour, this wine has all the perfume lift and exuberance you would expect from old vine Cinsault. The nose is aromatically charged, brimming with fresh violets, cherry blossom, rose water, lychee skins, sun dried cranberries, potpourri and an exotic touch of Turkish delight. Wonderful purity and clarity are always hallmarks of this wine as are the radiant fresh acids and bright, crunchy, sappy red berry fruits. 'The 2016 Family Red Blend is a blend of 71% Shiraz, 13% Grenache, 11% Cinsault and 5% Tinta Barocca. It has a very pure bouquet, quite floral and intense, with dark cherries, black plum, warm gravel and light truffle scents, the 80% whole bunch completely disguised. The palate is medium-bodied with quite grippy tannin. There is good backbone here, quite dense but well defined with a chalky, slight austere finish, partly because Adi now undertakes more aging in concrete. Give this a couple of years in bottle.' Savage Red Blend 2016

81% Syrah, 11% Grenache, 8% Cinsault, carefully selected "with love" from vineyards at altitude and with close to the coast. A 94-pointer for both Greg Sherwood MW and Christian Eedes. Sherwood describes it as “the most classically proportioned of all the Savage reds”, with a “beautifully complex nose of perfumed dried roses, black berry fruits, grilled herbs, cured meats, garrigue, fynbos and dusty granitic minerality”. Pretty much on the money, we think. The palate is full with fine tannin, soft spices and juicy cranberry and strawberry along with hints of dark berry fruits. For a slightly alternative Christmas meal, you might try pairing this with slow-cooked beef brisket with star anise and chilli. Yummm – with three ems.

Gorgeous sangiovese with red fruit, soft oak and a little development. Deep sour cherry, a little blackcurrant, cola and sweetly decaying autumn leaves/stewed tea. Cocoa powder-like oak and vanilla hints. A glut of ripe-to-bursting summer berries. The palate is round with a sour cherry fruit note and beautifully fine, powdery tannins. The acidity keeps this feeling fresh, and palate is quite light despite the oak profile and ripe fruit.

Monte Santoccio Santoccio Rosso Nicola Ferrari 2017

This is a truly an inspiring wine. It's a new release from Nicola Ferrari, the disciple of the late, great Bepe Quintarelli. I drank it last night with lasagne and was in seventh heaven. The nose captivates - perfumed with the tantalising bitter-sweet aromas of Amarone in the background, but it floats on the palate. There's a lovely density, with power yet with grace. The flavours are supremely delicious. It's wine perfection. This is a very special achievement. There is no need to wait to drink it as it gives huge pleasure immediately. But it will keep a few years.

Keermont Estate Reserve 2013

36% Merlot, 27% Cabernet Sauvignon, 17% Cabernet Franc, 6% Syrah, 4% Petit Verdot from a selection of sites between 250 and 400 metres above sea level on the mountainous slopes above the Keermont cellar in the valley between the Keermont and Helderberg mountain ranges. This stunning blend spends nearly two years in oak and two years in bottle prior to release. It will keep for many a year but is looking superb; cranberries, a touch of sandalwood, cherry clafoutis and bruised herbs.

Until Pomerol became famous, many of the wines of Canon-Fronsac, which is just to the west, used to sell for more. This is a good example of why. It is extraordinarily delicious, deep, rich, and fabulously mature. This is glorious wine to settle down into with a grand meal. Now that the sheen has gone from some of the famous names of Bordeaux that have been very overpriced, this is where to park you money. And it’s a 2009, to boot! Absolutely scrumptious.

St Joseph 'Petit Pere' Aymeric Paillard 2015

The vineyards are near Tournon, opposite Hermitage. Aymeric Paillard worked at Delas, where he converted their Hermitage vineyard to organic, and did some work for Stephane Ogier, prior to finding a 4 hectare vineyard he farms organically. Concentrated, fresh and mineral, with taut compact fruit. There is super tight blackcurrant, licorice, savoury wood and garrigue notes and a hint of pepper. Beautiful, fine, old school style.
