Good wines do need time, generally, to show at their best, and I would say it needs a couple of hours of being opened or even decanted if drinking now, but this demonstrates that this vintage of Chocolate Block has complexity that isn't fully revealed in its youth and that it will grow and become better and still be very good in four to five years. As ever, this is a very fine buy, as you're getting a grown-up wine for a modest price, which offers so much pleasure.  As ever, what makes Chocolate Block so good is the drinkability and quality combined. And then there's the price. Oh, where to begin. He’s the guy, at the tender age of 24, who co-founded renowned US based Spanish specialist wine importer, Olé \u0026amp; Obrigado. A farmer, producer and historian all in one, he’s dedicated a huge portion of his life to exploring, identifying and preserving old varieties and clones, and has successfully identified a whopping 200+ old clones of Palomino Fino and Palomino Jerez and revived and re-planted over 20 grape varieties on the brink of extinction. We first discovered this wine dining at a local restaurant, and quickly became smitten. For the first few years of working with them, we struggled to get enough of an allocation. But we kept knocking on the door every January, asking how the latest vintage was looking and whether they had any for us. What inspired our persistence? Several things, but perhaps foremost is that they treat their most basic village wines with the same care and attention as their Grand Cru offerings.
