
Tasting Notes
Prosecco Col Fondo? It literally translates "with its bottom," meaning the wine has been bottled on its lees, and finishes fermentation in the bottle. The resutting wine has a gentle haziness, lots of flavour, and a gentle mousse. This one has a super mouth-filling mousse – although I'd describe it more as a foam than a mousse, with notes of pears and gently bready notes, almost a savouriness - with honey on toast, fennel and a gentle salty finish.

We have Veneto producer Nicola Ferrari of Monte Santoccio to thank for our partnership with the Collavo brothers. Robin was chatting with Nicola and asked who he went to when he wanted a good glass of Prosecco. From an area awash with mass-produced fizz, who were the little guys worth knowing? Without missing a beat, Nicola pointed Robin towards Fratelli Collavo. So, we tasted the range and were utterly beguiled – especially by their Colfondo. They're certified organic and work regeneratively too.
