It has a super mouth-filling mousse – although I'd describe it more as a foam than a mousse. The ancestral 'Col fondo' method does cost more to produce, as you'd expect, but at this price, I would back-up the truck.
What a pleasant and moreish mouthful. Glou-glou central. Gentle fizz. Fresh and bruised apple. A soupcon of white peach. Nice hint of bready creaminess. A pure hit of pleasure. Lovely mouthfeel. Simple in the most charming way possible. Pleasantly dry (who can stand sweet Prosecco? It's an abomination), with a certain savoury, bready richness. It's not pop. It's more refined than that. If you were entertaining (for when are allowed to again), you could proceed with absolute confidence that this sparkler would please allcomers. If it were possible to hook this up to the mains water supply, it wouldn't be a bad idea.
