They are also experimenting with amphora for ageing both whites and reds – pretty rare in the relatively staid environs of Chablis. To bring back a traditional industry and attract more people to the village the ex-marketing director of Castellare di Castellina, the agronomist of Fonterenza and Pieve Santa Restituta, and the owner of Osteria Maccale got themselves together to create a new winery and they named it Cantina del Rospo. \u003cspan\u003eThis is not a project to make money, but to bring some pride back to the locals and show people it’s not all about Brunello, which of course is where the money has been poured into. A farmer, producer and historian all in one, he’s dedicated a huge portion of his life to exploring, identifying and preserving old varieties and clones, and has successfully identified a whopping 200+ old clones of Palomino Fino and Palomino Jerez and revived and re-planted over 20 grape varieties on the brink of extinction.
