Our extra virgin olive oil is made from the fruit of our olive orchards, which is harvested entirely by hand every year in early November, immediately after the grape harvest. We have about 800 Olive trees which, in the Chianti tradition are dominated by the varietals: Moraiolo, Frantoio and Leccino. The terroir and these ‘cultivars’ give our oil its peppery, fruity and intense flavour.
