This is a wine to go with those rich creamy sauces. There’s plenty of body, but the fruit remains fresh and there’s that pure limestone tang along with a mild toasty spice, even creamy coconut, from the oak ageing. Some nice heady floral notes of acacia and chamomile. Altogether denser than Le Perrières but elegant all the while.
‘Sous la Velle’ (means ‘under the town’) is one of the warmer Buisson’s chardonnay sites in Saint-Romain. The vines here are among their oldest – on average 60 years old and going up to 90 years old. The western exposure and higher ratio of clay and marlto limestone here means the Sous la Velle chardonnay cuvée is probably the family’s richest and roundest. 10 to 20% new oak.
