Like Champagne, it's made with two fermentations, and in this case, it's kept 20 months on the lees. It's made with the local grape Mauzac, with a touch of Chenin Blanc. This is the Blanquette de Limoux recipe, as opposed the Cremant de Limoux one, which can be made with Chardonnay and Pinot Noir. But I am loving the character of this and not missing the flavour of Chardonnay. In fact, I don't think I could tell. All I know is that it tastes brilliant.
