Maximum 6 bottles per customer - Made from extremely low-yielding Grenache grown on slate. Restrained, mineral, pure and ethereal. The texture is mesmerising, with the sort of nuance one would expect from a top Burgundy. This is very far from being a rosé for rosé’s sake, and the Grenache is simply a medium for highlighting the terroir – a job it does perfectly. Possibly the best rosé I have tried in my life. Very pale salmon colour, bone-dry in style with concentration and elegance.
Thomas’s work in the vineyard is also fundamentally important. He works with specific parcels of vines, studying the variations of styles that each parcel creates as a Burgundian winemaker would do. From very early on in his career he has followed biodymamic principles, and has been certified by Biodyvin since the beginning. To anyone who thinks that Roussillon is all about high alcohol and over-ripe fruit flavours, the freshness, precision and finesse of Thomas’s wines - both reds and whites - will come as a revelation.

“'Very pale salmon colour – just a little bit deeper than a Provence pink. Really rather burgundian on the nose! Such savour and perfume with a certain sweetness. Really very gorgeous with a lovely satin texture. The acidity is so pronounced and the texture so fine that I'm lapping it up at room temperature though I'm looking forward to enjoying it chilled with sole and tomates confites. So refined! And long.
