This is the new breed of luxury Champagnes that come from small independent growers that are at least as good as the big house luxury cuvees from Dom Perignon, Cristal. With no dosage (or chaptalisation - the addition of sugar to get the first fermentation going) it is the purest of the pure.

It floats in the mouth; the elegance is amazing. It's made like fine white Burgundy, only in the best vintages, vinified and aged for two years in oak, before being kept in bottle for a further 3 years, and then disgorged after which is lies in the cellar another 2 years. It's one to savour with your partner and just a few friends at a time, when you can really consider the beautiful purity and density of fruit.
