In a rarefied place like Burgundy, it really helps to separate the wheat from the chaff, so to speak. Soils that are chemically sprayed to get rid of weeds and pests tend to kill the microbial life in the soils. Then you have to pump chemical fertiliser in to counter the damage and end up with artificially high yields. The only people winning are the chemical manufacturers. With organic farming there are no short cuts. You have to look after your vines very carefully and work hard to keep them healthy in order to get a decent crop. Organic farming keeps yields low - which means better concentration and of course better wines. Healthier soils also allow the terroir to shine. Ask any Burgundy winemaker worth their salt and they'll confirm this. This tasting confirmed what was already obvious – that the Buisson brothers are one of the star acts of the Côte de Beaune. They dare all and they achieve it, managing an astonishing purity in their wines, of both colours. "If you are not yet aware of the brilliant wines of Fred and Franck Buisson (Domaine Henri & Gilles Buisson), it is time to rectify the omission" - Jasper Morris MW, InsideBurgundy.com

Domaine Henri et Gilles Buisson is a sensational producer. Both Olivier and Caroline are from eminent Champagne families, and Olivier's grandfather Rene was a pioneer of organic farming in the region. They are what's known as an independent grower, based 15km west of Epernay. They have brilliant grand cru and 1er sites in Mesnil, where they grow Chardonnay and farm organically. It's also home to a couple of Champagne's most famous cuvees like Krug Le Mesnil and Salon Mesnil. In the Marne they have a site regarded as one of the best for Pinot Meunier and Pinot Noir. Collard-Picard age this Champagne in wood, which is very unusual, and harks back to the more traditional way of making great Champagne in the past. They opt not to do malolactic fermentation on any of the wines to preserve their character, and all yeasts are indigenous too.

//cdn.shopify.com/s/files/1/2466/1541/files/BC_Upload_e611c543-cf77-418f-b757-fdd9519114f1.jpg?v=1782391772
