Hand sorted and gently destemmed into a traditional French oak cuve. Following a five day soaking the natural yeast fermentation proceeded, peaking in temperature at 32ºC. The wine was pressed off skins after 16 days into tight grain French oak 500L puncheons for malolactic fermentation and maturation. It remained in oak until February 2023. Intense black cherry, Asian spice and a perfumed floral note highlight the aromas. The palate is finely poised, rich and concentrated. The silky texture and volume of fruit carries the long finish. The 2025 season brought another cool and late vintage.  Low yields produced intense wines with impeccable balance and persistence. The Pinot Gris is planted in Block 2, in a section of the vineyard on sandy clay loam soils, with iron shot stone and light medium clay. The fruit was hand picked on 19 February and whole bunch pressed. The juice was then cold settled and wild fermented with 80% in stainless steel and 20% in old French puncheons (500L). The wine was estate bottled in July 2025.
