A few of us had the good fortune to drink Champagne in the cellar of Olivier Collard a couple of weeks ago. We finished the tasting drinking an exquisite red. Formerly Robin had only eyed this wine in a couple of barrels on a trip two years earlier. Olivier had told us how excited he was by this new wine, so we’d been eager to try.
The vineyard is completely organic. There is no sulphur or copper used (not allowed for organic production). Only the weeds are taken out of the vineyard, by hand.
