Fabulous organic, zero dosage 100% Parellada bubbles - quality cava in all but name! Croissant dough, lemon sorbet, fine hazelnut and vanilla yoghurt. There's just the right amount of richness and mouth-filling, bready mousse, lovely citrus streak, blanched almonds, with underlying excellent acidity and fresh sea spray finish. An excellent and very classy alternative to champagne or English sparkling.

Here we have a cava in all but name, as Miquel Jane are one of the few producers who chose to opt out of the DO Cava and join the new, quality orientated DO sub region of Classic Penedes. Why may you ask? Some quality orientated Cava producers believe that the name cava has been overtaken by cheap, bulk supply rather than craft, terroir specific bubbly. And the proof is there really, with approximately 95% of the sparkling wines produced under DO Cava are from three massive producers, the big two being Freixenet and Cordorníu. Wines from Classic Penedes must be certified organic and follow the strict traditional methods and long ageing, and all wines must be vintage too.
