This is a really thought-provoking rose, and an astonishing example of quite how complex English sparkling can be. Golden, orangey in colour, like the sun melting into the sea at the end of day, with the most exotically spiced nose - orange oil, pot pourri, cardamon, clove and cinnamon bark, with a dried rose petal finish. It's almost quite Christmas cake-like in its heady, spiced way. This wine, now with more time in bottle, has evolved beautifully, and is a fascinating drop. We would definitely recommend this as a champagne to be enjoyed with food, rather than something to sip on with just a little nibble or nothing at all. It would be super with some Ottolenghi-inspired fare, dishes with exotic ingredients like barberries, pomegranate molasses, za'atar and harissa.

It’s a testament to the combined efforts and expertise of estate managers Richard and Kirsty Goring, and winemaker Dermot Sugrue, and confirms Wiston as a genuine trailblazer of quality English sparkling wine. Taking inspiration from his previous work in Champagne, Dermot prefers to use old Jacques Prieur Burgundy barrels for fermentation and ageing of Wiston’s vintage wines and his approach to winemaking is all about patience – as such Wiston sparkling wines will only ever be released once they have reached pitch-perfect readiness. Their NV wines are unbeatable examples of just good English sparkling can be.
