They farm around 20ha of vineyards on some of the best south-facing slopes in Chablis, along with some of the exciting yet unsung Burgundy appellations south-east of Auxerre like St-Bris, Chitry and Irancy. They are also experimenting with amphora for ageing both whites and reds – pretty rare in the relatively staid environs of Chablis. At the time the boundary was set, no one thought someone would plant above the woods on the next hillside over from Sassicaia, but actually above Gaja's Bolgheri property, Ca' Marcanda. But they did. Originally intended as a place to breed horses and a family retreat. Wine-loving f\u003c\/span\u003e\u003cspan data-mce-fragment=\"1\"\u003eriends came to visit and pointed out Sassicaia’s original vineyard, under the castle, that you see when you look over your right shoulder, and then a bit to the left of that, the Masseto vineyard. Then you have to pump chemical fertiliser in to counter the damage and end up with artificially high yields. The only people winning are the chemical manufacturers. With organic farming there are no short cuts. You have to look after your vines very carefully and work hard to keep them healthy in order to get a decent crop. Organic farming keeps yields low - which means better concentration and of course better wines. Healthier soils also allow the terroir to shine. Ask any Burgundy winemaker worth their salt and they'll confirm this.
