Tasting Notes
Such magnetic appeal on the nose! Croissant flakes, apple compote and the merest whiff of honeysuckle, kept in check with a crystalline, limey focus that speaks of the site’s calcaire soils. The palate is loaded with delicate slices of crunchy Gala apple and ripe Comice pear, with some sumptuous notes of macadamia nuts, acacia blossom, toasted almond slivers, and a tease of lemony butter. The finish is what makes it – it shimmers and lingers long after you have swallowed the last drop. Even sniffing the empty glass is a joy. It’s a beautiful thing to drink now and will age for 5 or so years. From a 0.25 ha block of 30-year-old vines planted on marl and limestone soils.
More Info
Young vigneron William Waterkeyn joined the domaine in 2015 and has since overseen huge change in the vineyards and cellar. Since his first vintage, he has facilitated the conversion to organic viticuture, the planting of more vineyards, and moving to a lower intervention approach in the cellar. In February this year, William was named as Burgundy’s Young Talent of 2020, and a week later, Decanter magazine cited them as one of the “top 10 producers to watch in Burgundy.” With the highly-talented William at the helm, and a new owner with a shrewd eye for the future, we’re thrilled to get in at such an exciting time in the estate’s development.
