Tasting Notes

Shimmeringly lithe, concentrated yet with a crystalline purity... it’s like drinking some of the finest St Aubin or Puligny. It's a wine that will age beautifully for a decade in your cellar, but will perform wonders on your palate if you're drinking it now. With roast turbot or some garlic-buttered shellfish - magical.

Tom Carson is a true winemaker's winemaker, an uber-geek known for his forensic attention to detail Lured to join Yabby Lake by the incredible efforts and attention to detail that were put into establishing the vineyard in terms of site and soil analysis, it's here that winemaker Tom has truly become known as a don of Pinot Noir. And his Chardonnay ain't half bad either!

“"The fruit for this 2021 Single Vineyard Chardonnay is from Mornington Peninsula, and the palate is bright with citrus pith, jasmine tea, tobacco leaf and dehydrated orange zest. This is a curious wine; it's complex, to be sure, but it is littered with unexpected flavors, like dried apricots, salted rockmelon (cantaloupe), river stones, gentian and graphite. The length of flavor is long, which is very good, because it allows time to unpick all the flavors." 93 ”
