Tasting Notes

The aromas pay tribute to those grand cru Chardonnay grapes. Ample and generous, with quintessential champagne notes of brioche, lemon, white pear and biscuit combined with a freshness as invigorating as sea spray. It has that combination of power and elegance that you find in Billecart-Salmon's Blanc de Blancs. The palate is substantial, a grand champagne in both richness of flavour and texture. Lemon syllabub springs to mind, with its blend of creamy mascarpone and sharp lemon rind, then it expands into riper flavours of apricot, honeyed peach and millefeuille pastry. It's a champagne that you can drink now or lay down for 3-5 years as it will gain further complexity. - Matured in large oak casks like the great Champagnes of the past - - Only ten other Champagne houses use these traditional sized barrels - - Outstanding quality, made exclusively from first pressing juice - - a blend of 50% Grand Cru Chardonnay, 25% Premier Cru Pinot Noir and Pinot Meunier grapes -
