We have Veneto producer Nicola Ferrari of Monte Santoccio to thank for our partnership with the Collavo brothers. Robin was chatting with Nicola and asked who he went to when he wanted a good glass of Prosecco. From an area awash with mass-produced fizz, who were the little guys worth knowing? Without missing a beat, Nicola pointed Robin towards Fratelli Collavo. So, we tasted the range and were utterly beguiled – especially by their Colfondo. Slightly cloudy as it’s bottled on its lees, this is Prosecco that manages to be joyful and complex all at once. Fantastic when paired with food, this is fizz for the adventurous.
