He seeks out interesting plots of vines and growers who prioritise ecologically responsible farming and keeps winemaking simple, without fancy designer yeasts or new oak in his downtown cellar in the historic city of Carcassonne. We love his wines for their authenticity, honesty and how very delicious they are.
