Tasting Notes
A real labor of love, this fine spirit is distilled in two Burgundy copper stills originally made in 1932 and 1952, still heated by burning wood. Then placed in decade-old French oak barrels for at least 3 to 4 years. Giving it time to develop its stunning golden, bronze-like hue before each barrel is bottled individually. "This Marc marks the birth of the Guillemot-Michel style: aromatic, seductive and sweet on the palate. Blend of ripe and juicy fruit liqueurs and dried herbs, a delicacy!"

Robin: There are only a few times in my life that I can recall having been moved and quite so excited when meeting a winemaker and tasting their wines for the first time. The wines of Guillemot-Michel age like very few white Burgundies. Jasper Morris MW reports in his reviews of Burgundy that following a tasting of 30 vintages of 'Quintaine' from Domaine Guillemot-Michel, that the 1999 and 2001 still taste very young! Morris sums up:" These are brilliant wines which work in so many different styles – refined, pure, complex, lush and botrytis-affected. This is what Viré-Clessé can offer, especially at the Clessé end and particularly Quintaine, when in the hands of master practitioners such as the Guillemot-Michel family, pioneers of biodynamics in the region. Congratulations to both generations – Pierrette and Marc, Sophie and Gautier. The domaine continues in excellent hands."
