Tasting Notes
A real labor of love, this fine spirit is distilled in two Burgundy copper stills originally made in 1932 and 1952, still heated by burning wood. Then placed in decade-old French oak barrels for at least 3 to 4 years. Giving it time to develop its stunning golden, bronze-like hue before each barrel is bottled individually. "Aging longer than the 2014, it presents a slightly richer profile, notes of toffee, candied fruit, sweet spices and nuts, without losing any of the indulgence and freshness that characterize our style. To affirm our original style, we have chosen to baptize our Marc de Bourgogne "Spirit of Chardonnay" from this vintage."

Robin: There are only a few times in my life that I can recall having been moved and quite so excited when meeting a winemaker and tasting their wines for the first time. The wines of Guillemot-Michel age like very few white Burgundies. Jasper Morris MW reports in his reviews of Burgundy that following a tasting of 30 vintages of 'Quintaine' from Domaine Guillemot-Michel, that the 1999 and 2001 still taste very young!
