Tasting Notes
From the slopes of Mount Etna, this is a blend of 90% Nerello Mascalese and 10% Nerello Cappuccio made by Salvo Foti who helped put Mount Etna on the map for fine winemaking. This is beautifully pure with plenty of verve. Notes of red cherry and raspberry, this is so fragrant and charming.

Made traditionally in the Palmento, the ancient way on Mount Etna. There is no destemming, the first crush is carried out by foot, there is no ageing in wood and no refrigeration is used at all. Transfer and bottling are carried out according to the phases of the moon. The wine is aged in Amphorae underneath the winery.
