Tasting Notes
Intense and complex aromas of dried plums, bitter almonds with balsamic and soft spicy notes. It has a very long finish. Sweet but not too sweet, this wine is perfect with aged hard cheeses and charcuterie. The grapes are dried until the end of February and then pressed, followed by maceration of 30 days and then fermentation for almost 30 days. The wine is then aged in tonneaux (large barrels).

Formerly an assistant to the legendary Valpolicella producer Giuseppe Quintarelli, Nicola Ferrari and his wife Laura now make their wines from 7ha of organically farmed vines in Fumane. The wines are nothing short of sensational. Each of these red wines is made from approximately 70% Corvina and Corvinone and then 30% of Rondinella and Molinara.
