Tasting Notes
This has fabulous aroma of ripe fruit with notes of warmed hazelnuts and some butter, going towards beurre noisette, with a hint of oak, but only just, and lovely ripe slightly exotic apple and pear, and a hint of white truffle. It creates a gourmet experience that becomes at one with a special meal, that blends into a beautiful fish of something like diver caught scallops with beurre blanc, or guinea fowl with wine and cream sauce and morels.
More Info
Domaine Henri et Gilles Buisson is a sensational producer. They are most definitely a feather in our cap. We don’t come across producers like this often, that aren't already being imported to the UK. In fact, it would be just a few like this in a lifetime, such is the quality of terroir they have, but more importantly what they’re doing with it.The Sous Le Chateau is one of 4 lieu-dits made by the Buisson brothers and this is the most generous in weight in texture being from a slightly warmer site than the others.
