Tasting Notes
Deep violet in colour, intense, pure and complex notes of blackberries, plum and cherry jam, balsamic and coffee notes, with a super long finish. This is wonderful with dark chocolate, sweet Gorgonzola and old cheeses. It is a blend of Corvina, Corvinone, Rondinella, Molinara, Merlot, Cabernet. The grapes are dried until the end of February, then pressed and maceration lasts 30 days, followed by a fermentation for almost 30 days. Ageing is done in tonneaux (large barrels).
