The fruit is air dried for 100 days, followed by fives years maturation in ancient, small barrels. Stunning notes of caramel, honey, confit fruit, orange, vanilla and nuts, with a beautiful refreshing finish. and fantastic length of flavour. So unique and unlike any other.

They only make 3000 bottles of their gorgeous Vin Santo, the nature of Passito winemaking really doesn't leave you with much volume, but what you do have, is gold-dust. Pair with a gooey Gorgonzola for a heavenly match.
