Tasting Notes

Sous Roche 'Absolu' is the one of the rarest of all Buisson wines. Each vintage, they select a number of barrels, preferring those that seem naturally a little reductive, and choose not to add any SO2. This is a glorious zero-zero wine -both high toned and pretty and floral, but also with some darker fruit, a little pepper and cured meats and sweet earthiness. Sublime.

Domaine Henri et Gilles Buisson is a sensational producer. They are most definitely a feather in our cap. We don’t come across producers like this often, that aren't already being imported to the UK. In fact, it would be just a few like this in a lifetime, such is the quality of terroir they have, but more importantly what they’re doing with it.

“Noticeably fuller purple and a little more body to the bouquet, thus more in fruit than flowers. Clearly more density here, then a mix of white pepper from the whole bunch and the marginal ripeness of the vintage. Finishes very well for all that. Drink from 2025-2028.”
