This results in a nicely cloudy wine with crisp flavour and a delicate effervescence. The wine has a delicious, mouth-filling texture, best described as a gentle foam rather than a mousse. Its packed with notes of nashi pears and fresh, bready aromas, with a touch of savoury elements reminiscent of honey on toast, fennel, and a subtle salty finish.
