
Tasting Notes
Handpicked and whole bunch pressed, the juice was wild fermented in 500L French oak barrels (25% new) and left on lees for 10 months. The result is a beautifully layered Chardonnay, coiled and concentrated, yet with an effortless elegance. White stone fruits, grapefruit pith, citrus blossom and flinty, nutty complexity. There’s intensity here, but it’s tightly wrapped, with a piercing line of acidity and chalky structure that promises a long future ahead. A much-loved go-to for lovers of finessed, mineral-driven Australian Chardonnay.

Tom Carson is a true winemaker's winemaker, an uber-geek known for his forensic attention to detail Lured to join Yabby Lake by the incredible efforts and attention to detail that were put into establishing the vineyard in terms of site and soil analysis, it's here that winemaker Tom has truly become known as a don of Pinot Noir. And his Chardonnay ain't half bad either!
